COCONUT CURRY CHICKEN 

1/3 c. frozen orange juice concentrate (thawed)
1 tsp. salt
1 egg, slightly beaten
1 frying chicken, cut up
1 c. crushed corn flakes
1/2 c. shredded coconut
1 tsp. curry powder
1/4 c. butter, melted

Mix orange juice, salt and egg, add chicken and marinate 15 minutes. Remove chicken, reserve marinade. Mix corn flakes, coconut and curry and coast chicken, pressing it on.
Place on lightly oiled, foil-lined pan and drizzle with butter combined with marinade. Cover with foil, bake 30 minutes at 350 degrees. Uncover and bake 30 to 40 minutes longer. Garnish with orange slices.

1 chicken, cut into chunks
1 tbsp. chili powder
1 tbsp. curry powder
1 tbsp. turmeric powder
1 tsp. cumin
3 cloves garlic, chopped
2 onions, chopped
2 tomatoes, roughly chopped
1/2 c. chopped cilantro
2 tbsp. oil
1 tsp. sugar
1 1/2 c. coconut milk
Salt and pepper to taste

Heat oil in big pot and fry onion and garlic for 1 minute. Then add the chicken and continue cooking for 3 minutes. Add all the spices. Stir everything together for a few minutes. Add the rest of the ingredients. Adjust seasoning and serve with steamed rice.

6 bone-in chicken breast halves, skinless
3 medium carrots, chopped
3 stalks celery, chopped
2 medium onions, chopped
2 tablespoons ground curry powder
2 tablespoons all-purpose flour
1 tablespoon hot water
1 (10 ounce) can coconut milk
1/2 cup raisins
1/2 cup apples – peeled, cored and shredded
DIRECTIONS
In a large skillet over medium heat, evenly brown the chicken breast halves. Mix in carrots, celery, and onions. Cook and stir until vegetables are tender.
In a small bowl, mix the curry powder and flour with hot water. Blend in coconut milk, forming a thick paste.

1/2 t marjoram
1/2 t thyme
1 c uncooked brown rice2 T olive oil
2 boneless skinless chicken breast halves

1/2 medium onion, chopped1 c cold water
2 T cornstarch

1 (10 oz) pkg frozen chopped spinach (thawed/drained)
1 c cottage cheese

1/2 c Parmesan or Asiago cheese

bring first 6 ingredients to a boil in a medium sauce pan,
add uncooked brown rice, cover, simmer on low 50 minutes.

meanwhile.. place chicken in heated skillet with the olive
oil, sprinkled with garlic seasoning. cook until chicken
is no longer pink and juices run clear. cool & cube.

using chicken drippings, saute chopped onions until tender.

mix 1 c cold water with 2 T cornstarch, set aside.

pre-heat oven to 350

in a large bowl, mix rice, cornstarch/water, chicken cubes,
cottage cheese, spinach, and onion. transfer mixture into
a casserole dish coated with non-stick spray. top with the
cheese, cover & bake for 45 min. remove lid, bake another
15 minutes until surface is lightly browned
